OUR STORY
One oven, four different Abu Dhabis
Al Yakkht is a family bakery on Khalifa Street, behind the Golden Tower, opposite Al Madina Fresh Market. Not on a main road. Not in a mall. Almost everyone who walks in for the first time walks in because somebody told them to.
The recipes are Palestinian and Syrian. That's the whole inheritance: the bread, the zaatar blend, the way the labneh is drained, the musakhan. None of it was ever written down. It came with the family, and it gets made the same way every morning because it's the only way anyone here knows how to make it.
We open at six. The oven doesn't go cold until midnight, seven days a week, and in between it feeds four different versions of this city. At six it's people on their way to work. At two it's students. At nine it's families. At half past eleven it's whoever is still awake and hungry. Same oven. Same dough. Four completely different crowds.
The part we didn't plan
For a long time this was just a counter. Then something started happening on its own. People were buying manakeesh on the way to the office and putting them on the table for everyone, not one, but ten or twelve, whatever the room needed. The next week they'd come back and buy more. We were catering long before we knew we were catering.
The first school contract made it official. A fixed number, every single morning, hot, before the first break. No excuses, no late deliveries. That changed how we work, because you can improvise for one customer and you cannot improvise for four hundred children waiting at half past nine. So we built a second side to the business around it: schedules, packing, labels, one invoice at the end of the month.
Why four doughs
Most manakeesh shops have white flour and that's the end of it. We mix four: white, brown wholewheat, organic wholewheat from Saba Sanabel, and a keto dough we developed ourselves. That last one wasn't a business decision. A customer who had stopped eating bread asked whether we could make something she could still eat. We kept trying until it was good enough to put on the board.
And yes, why "Al Yakkht"?
It means "the yacht." We're a bakery on a side street in Abu Dhabi. No sea view, no yacht, and no dramatic story about one. We could invent something. The truth is we liked the name and it stuck, and by the time anyone thought to question it there were already people calling us the yacht as though it made perfect sense. Some things you don't fix.
The people who open the door
Everything above only works because of the team who unlock the kitchen at six, before the street is awake, and who are often still the faces you'll see if you come in at eleven at night. When customers write that the staff here are kind, and they write it a lot, that's exactly who they mean.
There's no secret to any of this. Mix it fresh. Price it so a family can afford it. Get it there hot and on time. That's been the whole plan since the first day.
